Elizabeth Coates Paschall (1702-1767) was a Philadelphia Quaker. When her husband died in 1742, she took over operation of his general merchandise store, and later built Cedar Grove, her house in Frankford. She was also a well-known lay medical practitioner in her community and collected medical recipes in her “receipt book” for common medical complaints.

The receipt book contains just over 200 recipes, with roughly a third related to cookery or household needs, the remainder are medical remedies. Paschall’s recipes came from her own experiences, were recommended by her community or area physicians, and were also found in books. In most cases, she includes the original source of the recipe.
